I arrived home from work to a gift from the heavens. Well, not the heavens exactly… but the garden of one of my dad’s coworkers. Close enough. There were two enormous zucchini sitting on the kitchen counter. The size that would cost $89570.23 in a store because of how large they are and how much they weigh.
I’m sure you are thinking that those look like ordinary zucchinis and that I am just exaggerating like I do 437% of the time, but for reference here is a picture of the zucchini next to my hand.
I LOVE zucchini. It’s so versatile and really healthy! My mom shredded both zucchini and then froze some of it to use later. We have about 20 cups in the freezer, 10 cups were used tonight, and about 8 more in the fridge to use this week. We’re set.
My mom is a baking machine. She set to work making the zucchini less healthy and more delicious. Chocolate zucchini cake. Enough said. It’s a vegetable… no matter what it’s in… it’s healthy.
As per my request she made zucchini loaf too! Chocolate chips and walnuts not included… why wreck a good thing? It benefits me greatly that my mom gets bored really easily and loves to bake.
Of course I had to include zucchini in my dinner tonight. The strands of shredded zucchini looked too much like spaghetti noodles… so I used them for exactly that. Zucchinoodles with tomato sauce and meatballs.
Pictures don’t do meals like this justice. I swear it tasted better than it looks through a camera lens. Filled me up and loaded my body with folate, potassium, and Vitamins A, B6, C and K!
My favourite ways to use zucchini include zucchinoodles, zucchini fries, zucchini pizza, zucchini and carrot loaf, and roasted or grilled zucchini. I think I’ll have to try ALL of these ways to use up the other 214 cups of zucchini!

I better My mom better get cooking! I definitely took it easy exercise-wise today – my legs were feeling it from yesterday. 30 minutes on the elliptical was enough to get my sore legs moving and work out a little bit of stiffness. After the elliptical I walked on the treadmill for 10 minutes. I actually walked for 8 and ran for 2 but I don’t think what I did could be considered running… it was more like “trying to gallop-jog and not fall off the treadmill at the same time.” Besides, taste-testing new and improved zucchini recipes is a much better way to spend my time today.
