You guessed it. This post is all about my run with my mom! She truly is the best so I was extremely excited to go running with her. Most days I work early in the morning and have to run after work while she runs in the morning, so it is rare that we get the opportunity to run together! Of course she was extremely happy to run with me!
Little did she know, we were going eight miles. Hehe.
It was a gorgeous and crisp morning and the chance to spend over an hour running and talking with my mom was wonderful! My legs were not ready for another fast run today so it was probably best that we took it easy today and had mile splits of 9:03, 8:51, 8:55, 9:02, 8:55, 8:58, 9:06, and 8:47. Our average was 8:57 min/mile. This morning was the first morning I had to put on pants to run… good thing I am in love with my winter running tights.
My mom wore a toque and I wore a headband to cover my ears but my headband was ripped off before we had even gone a mile – it was too hot! My mom left her toque on the whole time so she had fabulous hair when we were done.
A morning off is so rare for me so I took advantage of it and prepared an awesome breakfast. PANCAKES! I may not have had oatmeal with peanut butter and banana but don’t worry, I just added the peanut butter and banana to my pancakes.
They were delicious and a perfect post-run breakfast! Whole wheat, healthy, filling, and oh-so-good.
It was a really simple recipe: 1/2 cup whole wheat flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, 1/3 cup apple sauce, 1/4 cup egg whites, and 1/3 cup almond milk. For best results, top with natural peanut butter and banana and eat alongside a cup of dark roast coffee.
Time off is a little dangerous for me however…
