It only took me two weeks to begin my February Foodie Challenge! This is a short month so I am counting on next week’s reading break from school to get some recipes made and tested and blogged! This past weekend I tested out my first recipe of the month – protein bars! Super simple to make and luckily I am not the first person in the world to make homemade protein bars… I adapted a recipe from HERE!
What better ingredients to include in protein bars than chocolate and peanut butter? I can’t think of a better combination! I la-la-love my homemade granola bar recipe which you can find HERE, so I had high hopes for my ability to make protein bars. Plus, 5 ingredients, how could I mess that up?
That does in fact look like a pan of brownies. I swear it was a healthy protein bar recipe! The bars are slightly drier than I would like (think Clif bar minus 10% of the moisture) but they tasted really good! They were sweet so I wouldn’t recommend adding any more honey but maybe something else to help moisten them up a bit more. I think I am going to try a baked bar recipe next time as these ones are no-bake bars.
First, combine the peanut butter and honey in a microwave-safe bowl and microwave for 30 seconds. Mix together and add the protein powder, oats, and cocoa powder. Add 1/8 to 1/4 cup of water (I did a tablespoon at a time and mixed in between) until you reach a crumbly but moist consistency. Press into a 9′ X 9′ pan.
Refrigerate for about 20 minutes and then cut up into 8-12 bars depending on how big you want the bars! You could throw them in the freezer for a few minutes to cool if you wanted. Then ENJOY! They are not overwhelmingly chocolatey because of the peanut butter and the muted chocolate in the protein powder. Really good as a snack on the go as well!
This wasn’t a “perfected” recipe in my opinion and I think I will mess around with a baked protein bar recipe next time but they were still really good! I love chocolate almond fudge Clif bars and this was super close in consistency and taste!
