Oh hey there February, did January last like 3 seconds for anyone else?
I kind of love February though, it’s short and sweet. It contains holidays like Valentines Day and Family Day and I am heading to Vancouver again in a few short days so I have a feeling this month is going to be pretty wonderful! I bought my parents flowers for their anniversary and I was 110% selfish when I asked for my favourite flowers to be added to the bouquet. Lilies are just too pretty.

Imagine that – better quality photos with a better quality camera 😉 I have really tried to make an effort to use my camera more often and I think my February Challenge in the kitchen will really help with that! So will my major efforts to procrastinate any and all school work ‘er day. #selfiesunday
In case you didn’t catch the last post where I listed my health challenges for February, I have challenged myself to step into the kitchen and be a little more adventurous this month with my culinary skills, recipe testing and development, and food photography! I love food and nutrition but I never take the time to experiment and really try my hand at good cooking!
In an effort to save all of my culinary energy for the month of February, yesterday my brother made me pancakes for breakfast! He had already made a batch for himself and was cooking them up when I got home from a 2-hour workout at the gym yesterday morning when I commented on how good they smelled and looked. Next thing I know, after I had showered and walked into the kitchen to make breakfast, he had made a batch of protein pancakes for me!! I love him!
Oatmeal, egg whites, an egg, plain greek yogurt, and cinnamon… blend it up and pour onto pancake griddle. I topped mind with strawberries, peanut butter, and a drizzle of honey! They were really delicious! This morning I headed to the gym early for a lovely and slow 7-miler to end the week. I had to get my run done before I attended a Lululemon event that I will talk about this week! All-in-all, a busy week of workouts!
