WIAW: It just happened.

I didn’t even plan on writing a What I Ate Wednesday (WIAW) but it just so happened I took photos of all most of my meals yesterday (some pretty, some not so much) so as I sat down to write this post I realized I had the perfect material for a WIAW link-up!! Woot woot!! I’ll throw in a little “Day in the Life” because obviously the times I ate these meals at is integral to the story. 😉


5:00am – Alarm goes off. Check to see that I set my alarm properly because that most definitely didn’t feel like enough sleep. Roll off of my bed and straight into some colourful spandex.

5:15am – Drive to the gym.

5:30am – Arrive at gym and question how I got there. I really shouldn’t be driving this early in the morning.

5:35am – 6:35am – Strength workout! Arms, chest, and shoulders for 60 minutes. I did raised planks with triceps kickbacks and I thought I was going to fall on my face. Luckily, I survived.

6:50am – Arrive home, shower, and put SHORTS on. 25 degree day thank you very much.

7:20am – BREAKFAST. 1 egg & 1 cup egg white omelette with spinach, mushrooms, tomatoes, and feta.


And yes, I do make perfect omelettes. 😉

8:20am – Bus to school. University campus during the summer is INCREDIBLE. No lines at Starbucks, parking at the bus station, a seat every time on the bus to and from school, quiet and peaceful buildings… it’s like nerd heaven.

9:00am – Do work. Or pretend to do work.

10:30am – SNACK BREAK. How can I possible grade final exams and attempt to figure out the depths of excel spreadsheets when I have no brain fuel. Hello?! Unpictured: Plain greek yogurt with a cut up apple and cinnamon. Spend an inordinate amount of time on the Staples website looking at boxes. I swear, mom, I’m doing important research.

1:00pm – LUNCH. I just got so caught up in making labels and weighting exams in spreadsheets that before I knew it my stomach was rumbling and it was time for lunch. I packed a veggie salad with a chickpea burger on top and some roasted red pepper hummus for dressing.


In that fine looking salad is some spinach, shredded carrot (leftover from my mom’s carrot cake), red pepper, sugar snap peas, and sunflower seeds. The chickpea burger is from THIS recipe. Hummus makes a surprisingly good salad dressing!


1:15pm – Attempt to make a Gaant chart in excel.

2:00pm – Sob silently in my cubicle over making a Gaant chart in excel.

2:45pm – Proudly walk around my office showing everyone my Gaant chart in excel and offering paid tutorials so other people can achieve such greatness.

3:00pm – Take the bus home. Stop at Superstore to buy old bananas to freeze for smoothies. I literally bought over 45 bananas… the half price ones because they are too ripe to sell at full price!

4:30pm – DINNER. You read the time right… like the elderly person I am, I ate dinner at a ridiculous hour in order to digest before I taught spin. Tuesdays and Thursdays are weird because spin is right around dinner time and I am too hungry in the afternoon and I don’t want to wait and have a full stomach right before bed, so I eat early. TACO TUESDAY. As I was eating a prepped my spin class playlist.

Corn tortillas with black beans, sweet potato, mozzarella cheese, and corn and tomato salsa.


5:30pm – Drive to the recreation centre I teach at! I get there early to set up and make sure there are no technical difficulties with anything before class!

6:30 – 7:30pm – SPIN CLASS. Even though it was crazy nice out I still had an awesome turnout at spin class! We had a tough class and some awesome sweat-dripping drills! Everyone pushed hard and we rocked it out!!

8:15pm – Get home and shower.

8:30pm – SNACK TIME. A chocolate blueberry protein smoothie. You guys, this 4-ingredient smoothie is the best. A cup and a half of frozen blueberries, 1 tbsp unsweetened cocoa powder, 1 scoop chocolate whey protein powder, and 1 cup of unsweetened soy milk. It’s not super sweet but has a subtle chocolate flavour and it is delicious!


9:00pm – Prepare this very blog post so that I can rest easy knowing you will awaken to my eloquent and well-prepared words of wisdom. Then I went to bed because holy was I exhausted!

  1. 45 bananas? You are my hero.

    My last workout was a 5 mile run. I had a boring day of eats yesterday. Oatmeal, salad, chana masala, yogurt parfait, green smoothie, spoonfuls of PB.

    Yesterday was SO BEAUTIFUL, hey? I wish the hot weather was sticking around longer!!!

  2. Yesterday I ate:
    7:30am – Plain Greek yoghurt with blueberries, blackberries and chia seeds
    10:00am – an apple and a handful of almonds
    12:00pm – gnocchi with spinach, peppers, sun-dried tomatoes, onion and home-made pesto
    2:00pm – an oatmeal coconut cookie from District Coffee Co. because they’re too irresistible… annnnd I’m supporting local businesses, right?
    7:00pm – vegetables roasted on the BBQ topped with feta, BBQ potatoes tossed in rosemary and garlic, and two poached eggs for protein
    9:00pm – not that I ate it, but The Big Chill tea from David’s tea is always the nightcap in our home!

    Favourite salad dressing – olive oil, salt, pepper, and white balsamic – so easy to make and I can’t get enough of it, although I’m sure my boyfriend is tired of it, oh well!

    My last workout – strength training with a few friends last night, and tonight we have 7 x hill repeats, total of 13km with warm-up and cool-down!

      1. Cooking is my favourite thing to do!
        Thanks for the luck! They went as well as hill repeats can go. My friend wanted to quit after 5 but I told her “how much more accomplished will you feel once you’ve done 7”?! She replied with “You’re right, I’m going to eat chips regardless” (chips are her big vice). But man – are my legs tired today! Big long walk tonight to stretch them out!

  3. LOL Your 1:15 – 2:45pm timeframe is the most amazing thing I’ve ever read… as I sit here in a windowless room full of cubicles.
    Your food looks goooood. I’m also a fan of hummus as a dressing/salad topping!
