Welcome to another edition of WIAW! First off, HAPPY CANADA DAY! I am volunteering at some Canada Day festivities in my town this morning and I am so stoked. I am extremely proud to be Canadian!! Happy 148th Birthday Canada!
I love this WIAW link-up because I love seeing what other people eat throughout the day and it gives me ideas for recipes, meals, and delicious foods! This is actually what I ate Sunday! I normally use my Tuesday eats for this post but you always get my pre-spin, post-spin, blah blah blah, so I figured I would switch it up!
After sleeping 11 hours on Saturday night, I woke up and made some loaded oats, with a side of strawberries and coffee. How can one not want a delicious cup of coffee on a weekend morning? Plus, it gave me the caffeine fix I needed for my killer cardio circuit workout.
After my workout, I drank a ton of water and got ready for the day. I felt like such a slacker, showering after noon, but I figured that’s what days off are for! I was ready for some nutrients in my blood stream so I made a salad with ALL THE VEGGIES. I didn’t put dressing on my salad because the cottage cheese was a nice creamy addition. I cooked the tempeh in lemon pepper seasoning, pepper, and salt. Electrolytes, amirite?
In the afternoon I met a friend for coffee and had an iced americano. Decaf, obviously. I actually added a pump of sugar-free mocha to the americano and it was a great chocolate fix! I’ll have to remember that one. I had a free drink on my Starbucks card so when that happens I’m like, “sooooo, what else can I add for free to my drink?”
I ran some errands, picked up a few groceries, and then came home around 5:00pm and wasn’t quite ready for dinner so I had a snack. I mix one serving of plain greek yogurt, one scoop of chocolate protein powder, and a cup of strawberries. It was perfect fuel to mow and weed-whack the lawn.
I had dinner around 7:30pm and made the best creation I have made in a while. A zucchini pizza crust topped with spinach, sun dried tomatoes, smoked garlic tofu, green peppers, chickpeas, and mozzarella. I perfected my zucchini pizza crust making skills and will forever be eating my pizzas on this one – it’s delicious!
I don’t eat too differently on weekends compared to weekdays, but I often have more time to cook and think about the meals I make. I get into a steady routine on the weekdays with my meals so it’s nice to spend a little more time in the kitchen on the weekend. That zucchini pizza crust was amazing!
