WIAW: Lazy Sunday Eats.

Without a vacation to take lots of neat photos of my food, I was scraping together the random photos from Sunday to show some eats. I had a fairly lazy day THANK GOODNESS, and did a bit of strength training, visiting with friends, crafts, and… eating.


Breakfast: After sleeping in until about 8:00 am I decided to go with an old stand-by breakfast of loaded oats (cooked with egg whites and flax seed) with peanut butter. It was delicious! Normally I have a lot more protein and a lot less carbs for breakfast but it was a nice change!


Lunch: After some upper body strength training with my brother and a tough barre class, I came home, showered, and dove into some tempeh and vegetables. I had some cheese with my tempeh and dipped some of my veggies in hummus. The perfect plate of deliciousness.


Snack:  I met some friends for coffee in the afternoon and enjoyed a soy americano misto, then came home and had a snack of greek yogurt with a scoop of vanilla protein powder. As I snacked I finished up some organization for our Waterton Alberta bloggers retreat this weekend.


Dinner: My mom made a huge lasagne, overflowing with ground beef and sausage for dinner, so I had a soy protein taco and kale and cranberry salad. It was actually SO good. I spiced up the soy protein with taco seasoning, threw in some spinach, diced tomato, shredded cheddar cheese, and salsa.


I had some strawberries and dark chocolate for dessert but didn’t snap a photo… oops.

This morning I am taking an extra day off of running to hopefully let my legs rest a bit more. Teaching two spin classes on Tuesdays and then running on Wednesdays definitely tires me out so I’m taking a needed rest. I might try a noon barre class or swimming but no impact for this chicka today!

Have you had anything with pumpkin spice yet?

Happy first day of fall – what is the best part of fall; boots, scarves, cool running weather, or pumpkin spice everything?


  1. I haven’t had anything pumpkin spice yet. I like adding pumpkin pie spice to my french press for DIY non/chemical coffee though. And the occasional baked good, but I really don’t go white girl crazy with fall stuff.

    I am bringing my own protein oat mixture to Waterton for breakfasts!!

    1. Yum!! I am bringing some more protein-packed options too… somewhat chemically Quest bars/Simply Protein bars just because I KNOW I won’t get enough protein if we’re eating out the whole weekend. 🙂
