WIAW: Last day of holidays.

Sunday was the last day of holidays before I headed back to school and also the day that I actually remembered to take some photographic evidence of my food throughout the day. Happy What I Ate Wednesday folks!


Breakfast: Protein pancake (egg whites, oats, and flax) with peanut butter and apple slices. My heart wanted chocolate chip pancakes but my waistline said no. ๐Ÿ˜‰ This breakfast may or may not have been eaten at 10:30am because that is when I rolled out of bed after babysitting until 2am.


Lunch Coffee: Between grocery shopping and a nail appointment with my mom I didn’t really have any food between breakfast and dinnerโ€ฆ I did have a nonfat latte though.


Dinner: A late breakfast and latte for lunch meant an early dinner for this chicka. I had a tofu and veggie stir-fry with brown and wild rice. SO GOOD. I just can’t get enough black pepper smoked tofu (no, that’s not a joke, it’s REALLY good.)


Snack: I had a yogurt bowl before going to bed with pear, kiwi, greek plain yogurt, and nuts/oats on top. I also had ‘Sleepytime’ tea and I wasn’t a HUGE fan. It was alright, just a basic camomile tea but it was no contender with mint and warmth teas.


There we have it. A day in the life of my stomach. ๐Ÿ˜‰ It was a unusual timed day of eats because I woke up so late but I kind of got into that routine during the holiday break. I would have a late big breakfast and then not really be hungry until 4 or 5 which is when I just had dinner. It felt weird to be eating breakfast at 7:30 on Monday before school!

    Breakfast has been a quest bar and about a gallon of coffee haha. Can’t lie – mornings aren’t the same if you don’t have a steaming mug of coffee.

    Have you tried Flapjacked protein pancake mix yet? It’s so good! I love the buttermilk flavour – it smells and tastes like buttery shortbread cookies.

    I’ve been eating oats lately. My current obsession is cooking rolled oats with a sliced banana, almond milk, cinnamon and chia seeds, then stirring in some egg white as the end + PB. SOOOO GOOD! Sometimes I add in some PB2 when I’m feelin’ wild.

    Fav fruit? PINEAPPLE! Also love rasberries, blueberries, peaches, honeycrisp apples and bananas


    1. Haha me too. Someone asked me that and I said, “Raspberries… and watermelon… and cantaloupe… and apples… umm, I can’t decide.” Hahaha!
