Good morning! It feels like a Monday morning after the long weekend which hopefully means this week is going to fly by! I feel like I have been away from school FOREVER so it’ll be somewhat nice to get back at it today. A lot of people ask my why I am vegetarian or how long I have been vegetarian… 1. For environmental and ethical reasons as well as general personal preference… 2. Strictly vegetarian 2 years, but dabbling for close to 4 years. I thought that I would provide a few resources that I have found super helpful for anyone who is thinking about incorporating a few more meatless meals into their lives or is simple just curious!
Just for a bit of background: I am not a vegan or purely plant-based as I do include eggs and dairy in my diet. I did try purely plant-based for about a month and the food just couldn’t keep up with my active life so I added milk, cheeses, yogurt, and eggs back into my life.
