On Friday I made black bean soup and corn bread for my family for dinner and though I don’t make it often, I absolutely love cornbread. It’s something I don’t think about making very often but it’s so easy and SO good. Paired with soup, chilli, salad, really anything, it’s amazing. I decided to continue to theme into Sunday’s breakfast when I made Cinnamon Cornbread Waffles! I don’t really use recipes for pancakes or waffles but really just stick with a plain base and add whatever extra ingredients I’m feeling. This time it was cinnamon, maple syrup, apples, and cornmeal.
Cinnamon Cornbread Waffles
1/3 cup whole wheat flour
1/3 cup yellow corn meal
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup apple sauce
1/4 cup egg whites
1 tbsp extra virgin olive oil
1/4 – 1/3 cup unsweetened almond milk
Mix all ingredients together and pour into waffle maker. Makes 2 waffles. Top with apple slices and as much maple syrup as you deem socially acceptable. If you are dining alone… the limit does not exist.
Waffles are such a delicious breakfast… or lunch/dinner. These waffles aren’t as fluffy as others because the cornmeal is heavier than flour but they were still tasty and I love when waffles have a bit of a crunch on the outside but are soft inside, which is exactly what these were.
What should I add to my waffles next?
